Juicing Primer

The fresh flavor of fresh-made juice is truly wonderful. Something everyone should enjoy. The health benefits are well documented. Each of us has different nutritional needs; if we meet them we can perform at our best physically and mentally, if we don’t we can’t. The enzymes – the workhorses of the body are alive and help us assimilate the juice and then go to work for us. Enzymes are destroyed above 117 degrees thus pasteurization destroys the enzymes in commercial juice products. The vitamins and minerals are naturally complex and complete, and easily assimilated. Synthetic vitamins are simple, only a part of the natural vitamin complex that makes up a vitamin is present. Fresh organic produce contains a higher nutritional content than commercially grown produce and we lose the chemical traces of pesticide, herbicides, fungicides, etc. If we use commercial produce we can eliminate up to ninety percent of the aforementioned traces by purchasing the top twelve sprayed fruits and vegetables as organic produce, go-to www.ewg.com for the list. Fresh made juice is an integral part of many healing therapies such as the Gerson Therapy. Thus if we are ill we can hasten our recovery by consuming fresh juices, Heinerman’s Encyclopedia of Healing Juices by John Heinerman is an excellent book. If we are well we can strengthen our immunity, our health and enhance our physical and mental performance by consuming fresh made juice. Note that fruit juices should be diluted 50% with filtered water as the sugar content is to high in 100% fruit juice. It is also important to note that too much sugar will impede the immune system, absorption of certain vitamins and minerals and recovery. Too much sugar also stresses the system – think of a child’s reaction to too much candy and acting out. Green juices are excellent nutritional sources but they do oxidize quickly and should be consumed immediately after juicing.

The materials used in the manufacture of the juicer are important where they come in contact with the juice. Stainless steel components are preferred, aluminum is completely unacceptable and plastic will leach minute traces of toxins into the juice. That said where price is an issue, plastic is acceptable and the benefits of juice should out weigh the issues of minute traces of toxins except perhaps in cases where toxins are the issue.

Let’s look briefly at four mixer types and pressing, the centrifugal, blender, masticator, and grinder or triturator type juicers.

The centrifugal juicer shreds and then spins the pulp at high speed throwing off the juice through a strainer/basket. A lot of the juice is discarded with the pulp and with it enzymes, vitamins and minerals. If this pulp is reused, in a sauce for instance, it is a net nutritional loss for that dish because it is no longer a complete food as we have already taken away a lot of its nutrition. At best we would break even with little if any net gain and we might as well have eaten the produce whole. (Please Note: If you have a centrifugal juicer, make sure the centrifugal basket has a angle to it. Straight-sided centrifugal baskets have been found in the past to create a small +/- electrical exchange between the basket and the wall of the juicer that was strong enough to destroy the enzymes. Blender juicer, this juicer slices or grinds the produce into a fine puree. Once again we are consuming the whole fruit or vegetable and would have been better off to have eaten the produce whole.

· The masticating juicer, This juicer tears the produce apart much like human chewing. The juice is squeezed out as it ejects the pulp. However, this leaves a lot of juice in the pulp along with enzymes, vitamins and minerals. Also the temperature does rise in the masticating chamber harming some of the enzymes. The Champion Juicer is an example of a masticating juicer.

· Triturator (grinder) / Press combination. This process combines the benefits of the grinder with a press. Grinding creates a finer pulp than a masticating juicer but not to fine. The press can be built-in as with the Norwalk Juicer or be a stand alone as with the K & K Grinder and K & K Press combination. The press, exerting 2000 lbs. of pressure extracts the remaining juice with its enzymes, vitamins and minerals. I have gotten as much as 3/4 a cup of additional juice by pressing the pulp from a Champion juicer with my K & K Press. And, more importantly, pressing extracts a much higher enzyme, vitamin, and mineral count than juicing alone. Ref. The Gerson Therapy Page 122. This became apparent to Dr. Max Gerson as the difference of recovery and the lack of it with his patients – given everything else as being equal.

I believe for anyone truly interested in building-up their health and immunity a triturator / press combination is hands down the best option. And, for those with chronic or degenerative diseases the triturator / press is the only option.
